Challenge: I had to cook something and wanted to avoid going to the store. Watching my mother while growing up, I had picked up on the art of using leftovers as ingredients for quiches. The only problem is that I didn’t even have a crust on hand. I decided to attempt my first homemade pie crust. I used Ina Garten’s recipe, and it came out perfectly! After creating the crust, I beat some eggs and threw in grated cheese, spinach, and various spices. It was not quick but I was able to do it without leaving home.
